Bentons Recipes - LEMON GOATS CHEESE-THYME MOUSSE

SERVES 5 PEOPLE

 

INGREDIENTS

400GRMS GOATS CHEESE

1 LEMON

2 SPRIGS OF THYME

600ML WHIPPING CREAM

1 YELLOW PEPPER

HALF GLOVE OF GARLIC

OLIVE OIL

100GRMS PARMESAN

 

INSTRUCTIONS

1-CUT OFF THE WAXY LAYER AROUND THE GOATS CHEESE-CUT INTO SMALL CUBES-PLACE INTO BOWL

2-ZEST AND JUICE 1 LEMON-FINELY CHOP ONE SPRIG OF THYME

PLACE IN TO THE BOWL WITH GOATS CHEESE

3-LIGHTLY WHIP 600ML OF WHIPPING CREAM

4-WITH FORK OR SPOON CRUSH THE GOATS CHEESE DOWN-LEMON AND THYME

5-FOLD IN CREAM INTO GOATS CHEESE MIX-ADD A LITTLE SALT AND PEPPER – PLACE IN TO FRIDGE

6-CHOP PEPPERS IN TO CHUNKY SLICE

7-TOSS IN OLIVE OIL-GARLIC AND THYME-PLACE IN OVEN APPROX 15MIN 190C (ALLOW TO COOL)

8-GRATE A SMALL AMOUNT OF PARMESAN-PLACE ON BAKING TRAY WITH GREASEPROOF PAPER THEN BAKE FOR TWO MINUTES-TAKE OUT OF OVEN ALLOWED TO COOL

9-TAKE OUT GOATS MIX-EITHER PLACE INTO MOULD

AND SERVE ON PLATE, GARNISH WITH THE ROAST PEPPER AND PARMESAN.
