INGREDIENTS
Lamb Kofta
One-pound prime mince
1 glove garlic
1 white onion diced
2 desert spoon curry powder
1 dessert cumin
Teaspoon ground ginger
2oz of breadcrumbs
1 egg
Season to taste
Couscous
Couscous -3oz
Sprig of mint
Third of cucumber diced
400ml boiling water
1 vegetable stock cube
Red Thai Curry Paste
Half onion
Garlic half a glove
300ml whipping or double
INSTRUCTIONS
Lamb Kofta
1 - fry of spice with the onion (leave to cool)
2 - mix fried spices with lamb mince
3 - Add bread crumbs-beaten egg and salt and pepper pinch
4 - Shape into burgers or patties
5 - Lightly fry in olive oil until lightly brown
6 - Place on to baker tray and place into oven at 190 for approx
7-10 min or until cooked through
Couscous
1 - Boil water and vegetable stock
2 - Place couscous into heat proof bowl
3 - Pour boiling water over couscous
4 - Lightly stir and cover with cling film
5 - Leave for 10 minutes
6 - Fluff up with fork
7 - Once cooled add cucumber and mint seasoned to taste serve
cold
Red Thai Curry Sauce
1 - Fry curry paste
with spice and onion
2 - Add cream and reduce on low light season to taste
3 - Pour over lamb
