RECIPE FOR CHICKEN LIVER, THYME,
WILD MUSHROOM PATE

SERVES
6-8 PEOPLE
INGREDIENTS
1lb washed chicken livers
Half red onion
Half clove garlic
1 sprig of thyme
Tablespoon of brandy
100grams of wild mushroom
1-pack of butter 250grams
Olive oil
Salt and pepper
INSTRUCTIONS
1- Fry of chicken livers in a
tablespoon of olive oil for 4-5 minutes leave the chicken livers
pink
2- Add brandy, cook for another
minute.
3- In another fry pan with olive
oil, lightly fry off wild mushroom with the red onion, garlic and
thyme, until soft and a pinch of salt and pepper.
4- Melt butter and leave to stand
for two minutes.
5- Place chicken liver and
mushroom mix into a blender then blend until mixer is smooth.
6- Start to add butter slowly
until all in with blender still going.
7- Check and season.
8- Place chicken livers
etc., into moulded 30cm long 10cm wide and 10cm deep that has been
cling filmed
9- Place into fridge for 3 hours
or until set
