RECIPE FOR STICKY TOFFEE PUDDING WITH
TOFFEE SAUCE

INGREDIENTS

Toffee Pudding
2
teaspoons of cocoa
1
teaspoon instant coffee granules
80ml
water
75 grams
of dried dates
200 grams
of self-raising flour
150 grams
of butter
150 grams
of castor sugar
3 eggs
1-teaspoon baking powder |
Toffee Sauce
65 grams
of butter
125 grams
dark brown sugar
65ml
whipping cream

INSTRUCTIONS
For the Pudding:
1 - Place
cocoa, coffee granules, water and dates in to a pan bring to the
boil, then turn heat down to simmer. Once the liquid has reduced by
half take off heat and allow to cool
2 - Place
soften butter and sugar into mixing bowl and cream together
3 - Mix in egg,
then sieve flour and baking powder into bowl. Beat all together
until completely mix together
4 - Blend the
date mix that you prepared in step 1 (with hand blender) into a
smooth mixture then add to mixer in step 3
5 - Spoon the
mixture into Dario moulds or zinc buttered ramekin then place all
the moulds into baking tray fill with 2cm of water around the
moulds, cover with tin foil place in a pre heat oven at 180 for 35
minutes
6 - Then run
knife around the side to ease out of the mould the pour over toffee
sauce
For the Sauce:
Place butter,
dark brown sugar and whipping cream into a pan, place on a low heat
on the cooker until butter and sugar have melted stirring all the
time then ready to serve.
